Quinoa Salad Burrito Bowl

3 cups cooked quinoa
4 cups romaine lettuce, chopped
2 cups sweet potato, cooked and cubed
2 cups red cabbage, shredded
1 can (15 ounces) black beans, drained and rinsed
1 cup corn kernels, cooked
1 cup prepared salsa
1/2 cup prepared guacamole
1/3 cup feta cheese, finely crumbled
1 lime, cut into wedges


  1. .Prepare quinoa according to package directions, and divide cooked quinoa evenly amongst 4 bowls.
  2. Top each quinoa bowl with chopped romaine, sweet potato, cabbage, black beans, and corn.
  3. Top with salsa, guacamole, and sprinkle with feta. Serve with lime wedges.
